What You’ll Need

INGREDIENTS

  1. 1/2 cup cooked quinoa
  2. 1/4 cup black beans, drained
  3. 1/4 cup corn kernels
  4. 1/4 cup diced tomatoes
  5. 1/4 cup diced avocado
  6. 2 tbsp salsa
  7. 1 tbsp lime juice
  8. Cilantro for garnish

INSTRUCTIONS

  1. In a microwave-safe bowl, combine quinoa, black beans, corn, tomatoes, avocado, salsa, and lime juice.
  2. Microwave on high for 2-3 minutes, or until heated through.
  3. Garnish with cilantro before serving
